After being tested in its whey, it is slowly baked in the oven until it obtains a golden and tasty crust, which encloses a compact heart, with an intense flavor. Different from the first baked ricotta in consistency and aroma, it is perfect to enjoy alone or grated on pasta and vegetables to add an authentic and rustic touch to dishes.
