The consistency is compact yet soft when cut, with intense and aromatic notes, ideal to be enjoyed on its own, grated, or paired with traditional Sicilian dishes. Artisanally produced with raw sheep and goat milk, rennet, water, and salt, it represents a true expression of local dairy tradition.
Azienda Agricola Isgrò, a certified organic farm, operates in the hills of Furnari and Tripi, producing traditional Sicilian sheep and goat cheeses.
