Sicilian provola is a stretched curd cheese typical of the island, produced with fresh cow's milk according to artisanal methods passed down through generations. The paste is compact, soft and slightly elastic, with a sweet, aromatic and delicately milky flavor. Perfect as an appetizer, paired with cured meats, honey or jams, or used in cooking to enrich typical Sicilian dishes.

The Scavone Farm and Casearia, located in the Sicilian hills, produces traditional Sicilian cheeses using cow's and sheep's milk from their own animals, fed on organic fodder grown on the farm.
