Pietra Zita Extra Virgin Olive Oil – Minuta Cultivar is produced in the Nebrodi Mountains , the green heart of Sicily, where ancient native olive trees of the “minuta” variety have grown for centuries. This rare and hardy cultivar, capable of withstanding adverse climates and thriving up to 800 meters above sea level , produces an extraordinarily nutritionally rich oil.
Minuta olive production is complex and precious: low yields , plants grown on steep terraces , and manual harvesting in October make it one of the region's most prized varieties. The olives are pressed within 12 hours of harvest in a continuous-cycle mill, ensuring maximum freshness and quality.
The result is an oil with a light , elegant, and surprisingly floral fruitiness, with aromatic notes that are rare for a Sicilian cultivar. Its delicacy makes it particularly suitable for fish dishes , raw seafood, elegant salads, or for those who appreciate a harmonious and highly refined oil.
