Harvest: second ten days of September, the grapes are harvested strictly by hand and for better conservation of the product they are placed in special boxes for transport to the cellar
Vinification: After destemming, the grapes undergo cryomaceration for approximately 24 hours at a temperature of 8°C to enhance aroma extraction and create a wine with excellent structure. After static decantation, the must is fermented at a temperature of 13°C for approximately 20 days. 25% of the product completes fermentation and begins aging in French oak barriques for approximately 120 days.
Color: intense yellow with greenish reflections, clear and bright
Aroma: Aromatic, intense, delicate and persistent; aromas of apricot, pear, pineapple and a complex floral bouquet are found.
Taste: Intense, velvety, slightly savoury and persistent; fruity, floral and vanilla aromas are found thanks to the refinement in barriques

Serving suggestions: Serve at 10-12°C; it pairs perfectly with raw fish, roasts, shellfish, seafood appetizers, lean meats, and mild cheeses. Given its rich structure, it pairs well with fatty meats.
