The selected Inzolia and Catarratto grapes come from the hills of Malfa (Salina).
The clear and brilliant wine has a pale yellow color with greenish reflections, the aromas recall wild flowers and royal jelly. The flavor reproduces the olfactory sensations of light refinement in wood with an aftertaste of floral scents.
It is a dry wine ideal as an aperitif and to pair with seafood appetizers, shellfish and roasted and grilled fish dishes.

Harvest: second ten days of September, the grapes are harvested strictly by hand and for better conservation of the product they are placed in special boxes for transport to the cellar
Vinification: after destemming, the grapes are cryomacerated for about 24 hours at a temperature of 8°c for a greater extraction of aromas and to create a wine with an excellent structure, after static decantation the must is fermented at a temperature of 13° C for about 20 days. 25% of the product finishes fermentation and begins the refinement in French oak barriques for about 120 days.
Color: intense yellow with greenish reflections, clear and bright
Perfume: Aromatic, intense, delicate and persistent; aromas of apricot, pear, pineapple and a complex floral bouquet are found
Taste: Intense, velvety, slightly savoury and persistent; fruity, floral and vanilla aromas are found thanks to the refinement in barriques
Alcohol content: 13.8% ethyl alcohol pH - 3.01
Total Acidity: approximately 6.2 g/l expressed as Tartaric Acid

Suggestions: Serve at 10-12° C; it pairs perfectly with raw fish, roasts, shellfish, seafood appetizers, lean meats and sweet cheeses. Given its important structure, it does not fear pairing with fatty meats.
