

Aged Provola
Sicilian aged provola is a stretched curd cheese made with cow's milk, processed according to ancient artisanal techniques. After an initial drying period, it is left to mature slowly, developing a thicker crust and a more intense and complex flavor than the fresh version. The paste becomes more compact and crumbly, with strong aromatic notes that recall the countryside and the pastoral tradition of the island. It can be enjoyed in slices, accompanied by full-bodied red wines or grated to enrich first courses and rustic dishes.

The Scavone Farm and Casearia, located in the Sicilian hills, produces traditional Sicilian cheeses using cow's and sheep's milk from their own animals, fed on organic fodder grown on the farm.
