Unlike floral honeys, Honeydew Honey is not derived from flower nectar, but from the sap of trees such as fir, chestnut, or oak. Its color ranges from dark brown to almost black, with a thicker, more viscous consistency than other types of honey. The flavor is intense and complex, with notes of wood, resin, and a light aftertaste of caramel and licorice. Thanks to its intensity, Honeydew Honey is perfect for cooking, as a sweetener for herbal teas, or as an ingredient in more structured recipes, particularly those requiring a robust, enveloping flavor.
