Salumificio Pintaudi 's guanciale , produced in Sant'Angelo di Brolo , is made from the cheek of the pig from which it takes its name and is extremely versatile thanks to its balanced texture and flavor . The natural veining of meat and fat creates a soft and aromatic slice, ideal both on the cutting board and in the kitchen. Coated with natural flavors (salt, black pepper ) and slowly aged , it develops a full and persistent flavor profile. Perfect as an aperitif cured meat and as an ingredient in savory first courses : slice thinly, let it air out, and pair with ancient grain bread and the island's red wines to enhance its character.
